Recipe of the Month

CRANBERRY PEAR CRISP

  •  6 cups of pears (about 5)
  •  1 1/2 cups cranberries
  •  1 tbsp lemon juice
  •  1/3 cup sugar
  •  1/2 cup flour
  •  1 stick of butter
  •  1/4 cup sugar
  •  1/4 cup brown sugar
  •  1/4 tsp cinnamon
  •  1 cup oats
  •  salt (to taste)

Preheat oven to 400.
Peel pears and cut into 3/4 inch pieces. Add lemon juice. Add cranberries & sugar. Toss all ingredients while in the bowl. Spoon ingredients into 8 ounce ramekins or all together in a 3 qt baking dish.
Using a food processor, pulse flour with butter until small clumps form. Add sugar, brown sugar, cinnamon, oats & salt. Pulse until large, moist clumps form.
Sprinkle fruit with topping. Bake about 25 minutes until the fruit is tender and topping is golden. Let cool 30 minutes. Top with ice cream.
