Recipe of the Month

APPLE PIE SQUARES

Crust:

  •  1 cup shortening
  •  1 tsp salt
  •  1 Tbsp sugar
  •  2 1/2 cups flour
  •  1 beaten egg yolk
  •  2/3 cup milk
  •  1 cup corn flakes

Mix dry ingredients. Cut shortening with pastry blender. With fork, stir in egg/milk mixture just until moistened. Divide dough in half. Roll out to fit 10x14 jelly roll pan. Place in pan. Sprinkle 1 cup corn flakes over dough.

Filling:

  •  10-12 apples, peeled and sliced
  •  1 cup sugar
  •  1 tsp cinnamon

Mix together and put in pan. Roll out other half dough and place on top of filling. Trim edges as for pie. Pinch together sealing edges. Spread reserved egg whites over top of crust. Bake 1 hr at 350 degrees. May drizzle with powdered sugar glaze once cooled.
